Cajun Scampi Tail

Recipe Ingredients

  • Scampi tail, thawed overnight
    in refrigerator1 bag
  • Olive oil1 tbsp
  • Green pepper, diced1 large
  • Onion, diced1 medium
  • Celery, diced2 ribs
  • Garlic2 tbsp
  • Cajun spice(paprika, cayenne
    driedthyme & oregano)2 tbsp
  • Tomatoes, diced2 medium
  • Soya sauce1 tbsp
  • Water1/4 cup
  • Hot sauce1/4 cup

Remove scampi from the bag and pat dry with paper towel.


Heat oil in a saute pan over medium heat. Add the peppers, onions, celery, garlic and cajun spice. Cook for 2 to 3 minutes stirring often. Add the scampi tails and stir for one minute.


Add the tomatoes, soy sauce and water. Cover and simmer for 8 to 10 minutes.


Remove cover and allow to stand for 2 minutes.


Season with hot sauce.


Serve over steamed rice.
